›Vinification
The aim is to obtain balance and freshness while avoiding over-ripeness and over-extraction.
It is in the vineyard that the wine is made and the 2017 vintage gave us grapes with almost perfect balance and maturity. Only the yields were poor in 2017, although in the fathers vineyard we were lucky to be spared from the hail and spring frosts that hit this year.
The grapes were harvested by hand, in small boxes of 12.5 Kg and 25 Kg, with sorting on the plot between September 5 and 13.
